Edition Koji Shimomura is owner-chef Koji Shimomura's French restaurant on the ground floor of Roppongi T-Cube at 3-1-1 Roppongi, Minato-ku, reached directly from Roppongi-itchome Station on the Namboku Line. Shimomura, born in Ibaraki, moved to France in 1990 and spent eight years in leading kitchens there, La Cote d'Or among them, before opening the restaurant in 2007. It holds one MICHELIN star in the MICHELIN Guide Tokyo 2026.
The name stands for editing: Shimomura's practice of refining and reinterpreting a cuisine rooted in French tradition while staying open to other cultures and the producers and chefs he meets on his travels. A private room seats two to six for lunch or dinner.
Lunch brings the Depart and Decouverte courses, Creation d'Edition, subtitled memory, appears at lunch and dinner, and dinner adds an Omakase Course and the Menu Edition Koji Shimomura, a special course built on the finest ingredients of the season. A vegan and vegetarian course comes with a homemade polyphenol drink. The MICHELIN Guide notes that the kitchen keeps butter and cream to a minimum and names chilled oysters with seawater and citrus jelly and kadaif-wrapped John Dory as signatures.
Lunch is served from 12:00 with last seating at 13:00, and dinner from 18:00 with last seating at 19:00; the restaurant closes on Wednesdays. The dress code is smart casual, which rules out T-shirts, shorts and sandals.
