Ginza Ukai-tei · Restaurant · Tokyo

Wagyu teppanyaki and rock-salt abalone at a circular griddle counter in the Jiji Press Building, Ginza
Ginza Ukai-tei is a teppanyaki restaurant on the ground floor of the Jiji Press Building at 5-15-8 Ginza, open since December 2003. Its chefs cook Japanese Black beef and seasonal seafood on the griddle in front of each guest, in a style the restaurant describes as rooted in French cooking.
The interior takes its theme from bunmei kaika, the Meiji-era opening to the West: a hundred-year-old zelkova beam, a mosaic wall, Japanese and Western antique furniture and Art Nouveau detail, with a graceful female figure greeting guests at the door. The main counter is a circular griddle designed around an image of the deep sea, where the chefs work shoulder to shoulder. Each private room has its own griddle and a dedicated chef, and adjoining rooms connect for up to 21 guests.
Every course centers on Ukai Selected Beef, Japanese Black wagyu chosen by the house and served as sirloin or tenderloin steak. The house specialty is abalone steamed in rock salt, which anchors its own course and also appears in the Special Course beside Japanese spiny lobster with caviar, roasted lotus root with beef tongue and marinated wild red sea bream. After the meal, dessert and coffee are served in a separate dessert lounge.
Lunch starts at noon on weekdays and 11:30 am on Saturdays and holidays, with last orders at 1:30 pm, and dinner runs from 5:00 pm to 9:30 pm with last orders at 7:30 pm. The restaurant closes on Sundays and two Mondays a month. Tables open for booking three months ahead.
