Alain Ducasse's French brasserie on the 41st floor of Park Hyatt Tokyo in Nishi-Shinjuku.
Girandole by Alain Ducasse is the French brasserie on the 41st floor of Park Hyatt Tokyo, in Shinjuku Park Tower in Nishi-Shinjuku. It opened when the hotel reopened in December 2025 after a 19-month restoration led by the Paris design studio Jouin Manku. Chef de Cuisine Kojiro Tsutsumi runs the kitchen after training in Paris and joining the hotel in 2007.
The room centers on a double-level collage of 144 black-and-white photographs by Vera Mercer, a portrait of European cafe life. The brasserie also has a bar counter with its own bar snack menu.
The cooking is a modern reading of classic Parisian brasserie dishes, with an eye on lighter techniques. Dinner is a set of starter, main, dessert and coffee, with the option of a second starter or a second main. The menu includes the Girandole signature salad with confit tuna belly, quail egg and taggiasca olives, a pate en croute of free-range chicken and foie gras, home-smoked salmon with lemon and horseradish cream, and a vol-au-vent of lobster, veal sweetbread and chicken quenelle.
Lunch is served daily from noon with last orders at 2:30 pm, and dinner from 5:30 pm with last orders at 8:30 pm. Breakfast is reserved for hotel guests. The dress code rules out beach sandals, sportswear and sleeveless tops for men, and shorts after 5:30 pm.
