Jean-Georges Vongerichten's counter restaurant on Keyakizaka-dori at Roppongi Hills
Jean-Georges Tokyo is Jean-Georges Vongerichten's restaurant on the ground floor of Roppongi Hills along Keyakizaka-dori, at 6-12-4 Roppongi, Minato-ku. The menu pairs classic Jean-Georges dishes from New York, cooked with French technique, with vegetarian and omnivore dishes created for Tokyo from local, seasonal Japanese ingredients. Executive chef Ryoichi Mochizuki, who trained with the Jean-Georges team, has led the kitchen since 2017.
The room seats 20. Downstairs, 14 counter seats face an exhibition-style open kitchen, where the menu is served omakase style, course by course, by the chefs. Designer Gwenael Nicolas worked in sandstone, washed and tanned wood and textured leather, with lighting by L'Observatoire, and a staircase wraps around a fabric sculpture by Reiko Sudo up to a six-seat private room with wide windows over Keyakizaka.
The signatures are the Jean-Georges classics: scrambled egg with lemon and vodka whipped cream under a spoonful of caviar, butter-poached turnip with caviar, crispy rice with chipotle mayonnaise and fish of the day, and fish with spices over green apple, squash and mushrooms in a mushroom vinaigrette. Tasting menus change through the year and finish with chocolate cake, vanilla and cacao nibs.
Lunch is served daily from 11:30 with last orders at 13:30, and dinner from 17:00 with last orders at 20:30. The house suggests elegant casual dress, with a collared shirt or jacket for men.
