Japanese cooking rebuilt from tradition by owner-chef Koyuji Koizumi in Kagurazaka
Kohaku is a Japanese restaurant at 3-5-5 Kagurazaka in Shinjuku, a short walk from Iidabashi Station, led by owner-chef Koyuji Koizumi. It holds two MICHELIN Stars in the MICHELIN Guide Tokyo 2026. The restaurant's stated philosophy is to keep Japanese cuisine as its axis while rebuilding tradition into flavors no one has tasted before.
Koizumi was born in Kanagawa in 1979 and trained at Kagurazaka Ishikawa before opening Kohaku in 2008. The room is small: an eight-seat counter and three private rooms, two for four guests and one for six, which makes the private rooms a natural fit for a family celebration or a business dinner.
The kitchen works past the usual borders of Japanese cooking, bringing in caviar, foie gras and truffle, and it often layers several techniques into one dish, frying in two stages and then simmering or grilling. Holding it together is a delicate dashi, built to support the ingredients as they are, with care taken over the bonito, the kombu and the water itself.
Dinner runs from 5:00 pm to 10:00 pm Tuesday through Saturday, and Saturday adds a lunch service from noon to 3:00 pm. The restaurant closes on Sundays, Mondays and public holidays. Counter seats are booked well ahead, and the private rooms sometimes open up through cancellations.
