Kozue · Restaurant · Tokyo

Modern kaiseki on the 40th floor of Park Hyatt Tokyo, with Mount Fuji visible on clear winter days.
Kozue is the Japanese restaurant on the 40th floor of Park Hyatt Tokyo, in Shinjuku Park Tower in Nishi-Shinjuku. The restaurant describes its cooking as modern Japanese inspired by traditional kaiseki. Chef de Cuisine Nobuhiro Yoshida joined the hotel in 1996, became Kozue's sous chef in 2007 and has led the kitchen since 2020, buying from producers he has worked with for decades.
Two bamboo sculptures by John Morford, each 5.3 meters tall, flank the dining room, and black-and-white abstract photographs by Mitsuko Miwa set a modern counterpoint to the traditional Japanese interior. On a clear winter day, Mount Fuji is visible from every table. Three private dining rooms take up to 18 guests.
Dinner is a choice of named kaiseki courses (Shiki, Raku, Zui and Shun) that follow the season, served on tableware drawn from the restaurant's collection, with sashimi, a grilled or hot pot course and a closing rice course in each. Sake from breweries across Japan, or wine chosen by the sommeliers, can be paired with each course. At lunch the signatures are handmade soba, an eel set, tendon served in a Yamanaka lacquer bowl and the Kozue Bento in a classic tiered box.
Lunch runs from 11:30 am with last orders at 2:30 pm, and dinner from 5:30 pm with last orders at 9:00 pm. Kozue closes on Wednesdays, except national holidays. Shorts are not permitted at dinner.
