Seiji Yamamoto's Japanese restaurant on the seventh floor of Tokyo Midtown Hibiya in Yurakucho.
RyuGin is chef Seiji Yamamoto's Japanese restaurant on the seventh floor of Tokyo Midtown Hibiya in Yurakucho. It holds three MICHELIN stars in the MICHELIN Guide Tokyo 2026, and the guide credits Yamamoto, born in 1970 in Kagawa Prefecture, with relentlessly honed knife and charcoal technique and a scientific eye for how each ingredient should be cooked.
The dining room seats 40, all at tables, with no counter. Two private rooms take up to eight guests each and a semi-private room takes up to four, and a single party tops out at eight.
Dinner is one seasonal omakase course, and the house menu sets out its shape: two appetizers, one warm and one cold; a seasonal owan bowl built on ichiban dashi; a sashimi platter served RyuGin style; fish grilled over bincho charcoal; a traditional simmered dish; then a meat course that might be Sanuki olive beef from Yamamoto's home prefecture, straw-grilled wild duck or Japanese pigeon, or Ezo deer. Rice of the day, cold and warm fruits with baked sweets, and usucha close the meal. The kitchen states that it uses no chemical seasonings at all, and the order of dishes shifts with each day's market.
Service starts at 18:00, with last entry at 19:30, from Monday to Saturday; Sundays and other dates on the house calendar are closed. The restaurant asks guests not to wear perfume or cologne, so the aroma of each dish carries.
