Cantonese cooking on the 37th floor of Mandarin Oriental, Tokyo, with views to Tokyo Skytree
Sense is the Cantonese restaurant of Mandarin Oriental, Tokyo, set on the hotel's 37th floor inside Nihombashi Mitsui Tower in Nihonbashi Muromachi. Executive Chef Toshiyuki Nakama, who joined the hotel in 2005, cooks Cantonese food with seasonal produce sent by growers and fishermen from Hokkaido to Okinawa, a style the kitchen calls Tokyo Chinese.
The dining room looks out over the city from high in the tower, and the view takes in Tokyo Skytree. For special occasions there is a private dining room that seats up to 16 guests, with the same panorama and its own service.
The cooking rests on more than ten house broths and on seasonings brought in from Hong Kong and mainland China. Set menus open with the SENSE Superior Soup and move through dishes such as the SENSE Duck Roll of straw-smoked Kyoto duck and foie gras, Buddha Jumps Over the Wall, braised aged Ezo abalone and wok-fried A4 wagyu tenderloin with Kampot black pepper. Weekend and public holiday lunches add a dim sum menu built on Japanese seasonal ingredients, and the sommeliers will pair wine to each dish ordered.
Lunch is served daily and runs until 4pm at weekends. Dinner starts at 5:30pm on weekdays and 6pm at weekends, with last orders at 8pm for set menus and 9pm for a la carte. The dress code is casual elegance, and gentlemen are asked to wear a jacket or a shirt.
Address: Mandarin Oriental Tokyo 37F, Nihombashi Mitsui Tower, 2-1-1 Nihonbashi Muromachi, Chuo-ku, Tokyo 103-8328, Tokyo
