Seasonal kaiseki and kappo dining at an Aji-ishi granite counter on the sixth floor of Grand Hyatt Tokyo.
Shunbou is the Japanese restaurant on the sixth floor of Grand Hyatt Tokyo in Roppongi Hills, cooking to the four seasons through kaiseki and kappo dining. Takuya Nezasa, Executive Sous Chef for Japanese cuisine at the hotel, has cooked at Shunbou since 2005, when he joined as its chef de cuisine.
The centerpiece of the 101-seat room is a counter of Aji-ishi granite from Kagawa Prefecture, with tables in the main dining room beyond it. There are also five private rooms: Mizu and Kaze in the kappo style, and Yuki, Tsuki and Hana in the ryotei style, most of them with sunken kotatsu seating. Dishes arrive on handmade ceramics chosen by the chef.
The kitchen serves Shunbou-mai, a rice grown in Yamagata Prefecture for the restaurant, and a wagyu sukiyaki of A5 Hida beef cooked in a horaku ceramic pot. Dinner centers on a traditional multi-course kaiseki built on seasonal and local ingredients, while lunch includes Shunsai, a three-tiered box of sashimi, charcoal-grilled, simmered and fried dishes. The assorted sashimi is the chef's choice of market-fresh fish, presented on Japanese ceramics.
Lunch runs from 11:30 to 14:30 on weekdays and to 15:00 on weekends, and dinner from 17:30 to 20:30. The private rooms suit family meetings and business dinners, and parties of more than nine are booked with the restaurant directly.
