Kaiseki, sushi, tempura and teppanyaki in one restaurant at The Capitol Hotel Tokyu
Suiren is the Japanese restaurant of The Capitol Hotel Tokyu in Nagatacho, on the hotel's third floor. The hotel connects directly to Tameike-Sanno Station and stands beside Hie Shrine. Four kitchens share the restaurant, kaiseki, sushi, tempura and teppanyaki, each cooking to the season.
Guests reach it from the lobby along a covered corridor, into what the hotel describes as a secluded annex wrapped in the green of the garden. The restaurant seats 83. Its private rooms run from two rooms for four, one facing a small courtyard garden, to two rooms for up to ten, one reached by a private elevator, plus teppanyaki counters that can be reserved whole for six or eight. The tempura counter is finished in warm wood grain, textured ceramic tile, hammered smoked copper and hinoki.
Kaiseki runs from the Keyaki course to Tachibana, the head chef's seasonal selection, and a sushi kaiseki pairs Edomae nigiri with kaiseki dishes. At the sushi counter, the Ruri set includes Suiren's own kombu-cured fish among twelve pieces, and the Fukuju tempura course serves nine pieces before a kakiage rice bowl or tencha. Kuroge wagyu comes as shabu-shabu or as sukiyaki, cooked slice by slice by the staff in a private room.
Lunch runs from 11:30 am to 3:00 pm with last orders at 2:00 pm, and dinner from 5:30 pm to 10:00 pm with last orders at 9:00 pm. Online booking opens up to six months ahead.
