Ten-ichi Honten · Restaurant · Tokyo

Edomae tempura since 1930 at the Ginza flagship on Namiki-dori, fried to order at the counter.
Ten-ichi Honten is the Ginza flagship of the Edomae tempura house founded in 1930, set on Namiki-dori in Ginza 6-chome, a five-minute walk from Exit B6 of Ginza Station. It has welcomed state guests and well-known visitors over the years, and the craft holds to one principle: the chefs judge the oil temperature and frying time for each ingredient and serve every piece the moment it is ready.
The building has been rebuilt, and its two basement floors mix old and new. On B1, a chair counter recreates the one from the original restaurant, beside vermilion-lacquered tables, tables under octagonal lights and an ozashiki counter with sunken horigotatsu seating that can be closed off as a private room for some group sizes. On B2, a newer chair counter faces an open kitchen. There are 41 seats in all.
Dinner comes as three courses, Ume, Momo and Sakura, built on 11 to 14 pieces of tempura with saimaki prawns and seasonal fish and vegetables, sashimi in the two larger courses and red miso soup, each closing with a choice of tendon or tencha. The Hana lunch course covers Edomae classics such as saimaki prawn and kisu, and tendon is served on its own. To drink there is the house Tenichi Daiginjo sake and the Tenichi Wine Selection 1930, which includes bottles from Domaine de la Romanee-Conti.
The restaurant is open every day except January 1, from 11:30 am with last orders at 8:30 pm. Courses run about two hours, and guests are asked to avoid strong perfume.
