Teppanyaki Keyakizaka · Restaurant · Tokyo

Wagyu, lobster and abalone cooked on the teppan grill on the fourth floor of Grand Hyatt Tokyo.
Keyakizaka is the teppanyaki restaurant of Grand Hyatt Tokyo, on the hotel's fourth floor in Roppongi Hills, reached through the sixth floor of the hotel or from the fourth floor of Roppongi Hills West Walk. Chef de Cuisine Yoshinobu Honda describes the cooking as a fusion of Japanese and Western techniques, with seasonal meats, seafood, poultry and vegetables sliced and seared in front of each guest.
The restaurant has 32 seats set around the teppan grills, so the sound and smell of the cooking and the conversation with the chefs are part of the meal. Kurumi, a private room for up to six, has its own teppan table where a chef cooks market-fresh ingredients for the group alone.
The menu runs a la carte or as one of four courses that change with the seasons, with tenderloin and sirloin wagyu alongside lobster and fish. Keyakizaka beef is an original wagyu: the chef developed the cattle's superfood feed and works with a local farm that raises it. Abalone is steamed on the teppan with seasonal vegetables and sauced at the grill, spiny lobster is steamed and served with the chef's own sauce, and seasonal white fish and vegetables cook in a papillote with truffle broth. A sommelier offers wine pairings for the courses.
Lunch runs from 11:30 to 14:30 on weekdays and to 15:00 on weekends, and dinner from 17:30 to 21:00. Kurumi suits a birthday or business dinner of up to six that wants a grill and chef to itself.
Address: Grand Hyatt Tokyo 4F, 6-10-3 Roppongi, Minato-ku, Tokyo 106-0032, Tokyo
