Wagyu teppanyaki on the 36th floor of Fairmont Tokyo in Shibaura, looking over Tokyo Bay
Totsuji is the teppanyaki restaurant of Fairmont Tokyo, set on the hotel's 36th floor in Blue Front Shibaura Tower S, on the Shibaura waterfront in Minato-ku. Wagyu sourced from across Japan is the center of the meal, cooked on the teppan alongside seafood, and the dining room looks out over Tokyo Bay.
Head Chef Ryusuke Sato brings 18 years across teppanyaki, French and Western cooking, including kitchens he led in France. A private room seats up to six guests, and after the meal guests move to an adjoining lounge, where dessert is finished in front of them with hojicha, the sound of traditional instruments and the view across the bay.
Service is chef's choice courses. Shinto, which the restaurant calls its most beloved course, centers on teppan-grilled live Ise lobster and Japanese Black wagyu fillet; Tosai pairs steamed live abalone with wagyu sirloin; and Akatsuki no toki brings together live abalone, spiny lobster and Kobe beef. Courses close with a choice of garlic rice or the house okonomiyaki finished with crisp Parmigiano, served with red miso soup and pickles made in-house, and the kitchen also makes its own soba. A Meat Keep service lets guests reserve premium wagyu that the kitchen stores and ages for them.
Totsuji serves lunch and dinner Tuesday to Saturday, lunch from 11:30am (last orders 2pm) and dinner from 5:30pm (last orders 9:30pm), and is closed on Sundays and Mondays. Everyone at the table orders the same course.
Address: Fairmont Tokyo 36F, Blue Front Shibaura Tower S, 1-1-1 Shibaura, Minato-ku, Tokyo 105-0023, Tokyo
