Japanese-Mexican fusion by the Cabo marina since 1994
Nicksan opened on the Cabo San Lucas marina in 1994, co-founded by chefs Angel Carbajal, from Mexico, and Masayuki Niikura, from Japan. Together they helped write the playbook for Japanese-Mexican fusion, and the original marina location still runs on the founding idea: the robustness of Mexico meeting the subtlety of Japan.
That balance shows up across the menu. The signatures are the tuna tostada, sashimi serranito, chiles gueros stuffed with crab and tempura, and a black-and-white tuna sashimi that has become a calling card. The result reads as neither strictly Japanese nor strictly Mexican, but a genuine third thing.
The kitchen's standing is not just local lore: Nicksan was named Best Restaurant in Los Cabos at the 2019 Culinary Awards, a rare nod for a fusion house that predates the trend.
