Japanese-Mexican cooking by the Cabo San Lucas marina since 1994
Nicksan opened on the Cabo San Lucas marina in October 1994, founded by chefs Angel Carbajal and Masayuki Niikura. Their partnership set Japanese technique against the flavors and coastal produce of Mexico, and Nicksan went on to pioneer Japanese-inspired cooking in Los Cabos. The original location, steps from the marina in Plaza de la Danza, is still going more than three decades on, with Carbajal as chef-owner and Edgar Carbajal as executive chef.
That balance shows up across the menu. Carbajal's first signature recipe is the tuna tostada, a tribute to his mother: yellowfin tuna on a wheat tostada with avocado, red onion, habanero and sesame. The lobster maki began as a festive dish he made for his father. The sashimi serranito dresses the catch of the day in a chile sauce with thin slices of serrano, and the black-and-white sashimi is seared tuna crusted in black and white sesame with a curry-scented ponzu.
For a closer look at the kitchen, sit at the sushi bar or book Angel's Table, where the chefs prepare the dishes in front of you. Dress is smart casual, and the house asks guests to skip sportswear, beachwear and, for men, sleeveless shirts.
Nicksan sits about two blocks from the center of Cabo San Lucas nightlife, an easy anchor before the evening goes on. Lunch is served daily from 11:30 AM to 5:30 PM and dinner from 6:00 PM to 11:00 PM.
