SEARED is the wood-fired steakhouse at One&Only Palmilla, the resort on the Sea of Cortez that began in 1956 as a 15-room hideaway and now sits beside the 27-hole, Jack Nicklaus-designed Palmilla Golf Club. Every element on the menu, from dry-aged cuts to just-caught seafood and local vegetables, is transformed over the flame.
The grill is the heart of the room. The selection runs from a 16-ounce wagyu rib eye and wagyu tenderloin to USDA Prime New York strip and tenderloin and a 20-ounce bone-in rib eye, finished with chimichurri, bearnaise, port wine or black peppercorn sauce. Totoaba, salmon and tuna come off the same grill, and dinner can open with Kumamoto oysters, a fontina-truffle eclair with beef tartare, or burrata with heirloom tomatoes.
Arrival comes with wide views of the resort and the sea. Pair dinner from one of Mexico's most extensive wine lists, with a cellar that reaches into the region's rarest vintages, or from house cocktails such as the mezcal-based Humo & Grapefruit. Save room for the SEARED Signature S'mores or the sticky toffee pudding.
SEARED serves dinner from 6:00 PM to 10:00 PM, all ages are welcome, and the dress code is resort casual.
