SEARED is the wood-fired steakhouse at One&Only Palmilla, created with Michelin-starred chef Jean-Georges Vongerichten and part of his global restaurant group. It opened in 2015 as the meat-and-fire counterpart to Agua by Larbi within the resort.
The setting carries history. One&Only Palmilla opened in 1956 as a small seaside hideaway and grew into one of the corridor's most storied resorts, with a landmark wedding chapel and a 27-hole Jack Nicklaus signature course alongside it. SEARED sits inside that legacy, framed by a glass-walled meat and wine cellar and opening onto an ocean-facing terrace and the Sea of Cortez air.
