New York's red-sauce supper club lands at Atlantis The Royal, Dubai.
Carbone landed in Dubai on October 6, 2025, the tenth global outpost of the Italian-American supper club that Mario Carbone, Rich Torrisi and Jeff Zalaznick opened in Greenwich Village in 2013. It sits inside Atlantis The Royal on Palm Jumeirah, and the room is a postwar New York time capsule: crimson velvet banquettes along walls hung with towering Venetian mirrors, custom chandeliers, and a curated art collection.
Service is part of the show. Captains in tailored Zac Posen tuxedos present each dish with its story attached, pacing the meal into a ritual that stretches across the evening. The layout runs from intimate two-tops to communal tables built for cross-table noise at peak hours.
The menu is made for family-style sharing across four to six. The Spicy Rigatoni Vodka is the cult hero, tubular noodles in a fiery tomato-cream sauce cut with Calabrian chiles, while the Veal Parmesan arrives as a butter-tender cutlet under mozzarella and marinara. Lighter openers include the Carpaccio Piemontese and the Eggplant and Zucchini Scapece.
Weekends pull an energetic crowd, from bachelor parties to corporate groups, with private corners for toasts that run past midnight. Dress is smart chic: men in collared shirts or refined knitwear with trousers or dark jeans and closed shoes, and no sportswear, shorts, flip-flops or open-toe footwear.
