Carbone is a mid-century Italian-American room set inside the newly transformed Chancery Rosewood at 30 Grosvenor Square, the storied former US Embassy. It spreads over two levels, with a ground-floor bar feeding into a staircase down to the main dining room below. Designer Ken Fulk merged 1950s New York supper-club swagger with Mayfair restraint - plush booths, checkerboard marble floors, and velvet seating framing artwork curated by gallerist Vito Schnabel, including pieces by Ai Weiwei and Julian Schnabel.
Sinatra-era vocals drift through the room, and energy builds from a calm early service to real evening momentum. The layout works for an intimate booth or a larger group settling in for a long dinner.
The menu is built for family-style sharing. Carpaccio Piemontese opens the meal, followed by the Spicy Rigatoni Vodka - the signature - alongside Lobster Ravioli and Lobster Risotto alla Arrabbiata. Mains run from Veal Parmesan and Dover Sole Piccata to Octopus Pizzaiolo and Scallops Rosmarino. Finish with the Banana Flambe.
