Designer Pierre Yovanovitch reworked the dining room in 2019, lightening the historic dark-wood panelling into warmer tones set against soft coral walls, hand-carved detailing, and custom furniture in velvet and pastel shades. A chef's table faces the open kitchen, and a dedicated Armagnac Room holds vintage bottlings dating back to 1888.
The current a la carte menu opens with a seasonal consomme, then has guests choose mains by the provenance of a single ingredient, such as a Cornwall crab or a Wales lamb, instead of a fixed dish list; the lineup changes through the year with the seasons.
