Kaiseki, Edomae sushi and teppanyaki on the 28th floor of Conrad Tokyo in Shiodome
Kazahana is the Japanese restaurant on the 28th floor of Conrad Tokyo in Shiodome, and it serves three styles under one name: kaiseki, an Edomae sushi counter and a teppanyaki counter. The hotel presents it as a place for seasonal Japanese cooking with the view across Tokyo Bay and Hama-Rikyu Gardens laid out below.
The restaurant seats 81: 40 at tables in the kaiseki area, nine at the teppan counter and eight at the sushi counter. Three fully private rooms each have a different character, from a sunken horigotatsu room with a panoramic view over Hama-Rikyu to a calm, spacious room and a glass-partitioned table room. They take groups of four to ten.
Kaiseki follows traditional Japanese cooking built on the season, and courses such as Kisho and Waraku change their dishes through the year, with charcoal-grilled wagyu among the mains. At the sushi counter, seasonal fish meets akashari, the red-vinegar rice of the Edomae tradition, in courses such as Saifu and the Chef's Special. The teppanyaki counter cooks domestic A5-grade Kuroge wagyu, and its most requested course, Hibiki, brings Ise lobster, abalone and wagyu steak.
Lunch is served daily from 11:30, last order 14:00, and dinner from 17:30, last order 21:00. The sushi and teppan counters seat guests aged 10 and over, so families with younger children book the kaiseki tables or a private room.
