Zuma Ibiza operates as a seasonal rooftop pop-up (May–October) atop Ibiza Gran Hotel in the Marina, seating around 150 guests with unobstructed views of bobbing superyachts and Dalt Vila’s historic walls. The terrace design—teak loungers, lantern-lit bars, flowing white sails—strikes a balance between casual beachside ease and refined cosmopolitanism. The kitchen spans three stations: a main kitchen, sushi counter, and robata grill, allowing you to move between intimate counter seating and communal tables that encourage lingering. Signature dishes anchor the menu: Black Cod Miso (buttery sablefish glazed in sweet white miso), Grilled Chilean Sea Bass with green chili-ginger dressing, Wagyu Beef Tataki with ponzu, and charred Lamb Chops in miso-yuzu butter. Crispy Rice with Tuna and the Zuma Roll (tempura shrimp, eel, unagi glaze) handle the shareable small-plates side. Desserts like Matcha Cheesecake and Mochi Ice Cream keep things modern. What we tell guests about Zuma: it is one of the Ibiza rooms worth a standalone evening rather than a squeezed-in pre-dinner. The reservation itself is handled directly with the restaurant — through their own site, OpenTable, Resy, SevenRooms, or by phone — depending on how they run their book. If you can get into the chef’s counter, bar seats, or a tasting menu slot, those are often the fastest way into the version of the room regulars are actually there for. For private dining or larger-group enquiries, the restaurant’s events or reservations team is the right first call, not a generic booking channel.
Hours, dress, and planning windows
What to know before you visit Zuma. The room operates on these hours: Restaurant 8:00 PM – 2:00 AM; bar until 3:00 AM. Seasonal summer pop-up at Ibiza Gran Hotel, Marina Ibiza. On the dress side: Smart elegant. No shorts, flip-flops or sportswear. Peak demand in Ibiza falls around the May–October season, with late-September and early-October closing parties at absolute peak, sharpest on the DC-10, Hï, Amnesia, and Pacha residency calendar, Solomun +1, ANTS, and Cocoon nights — those are the dates the reservation book closes furthest out. If the main dining room is full on your target date, ask the restaurant about chef’s counter, bar seats or a tasting-menu slot; those formats often stay open days after the primary book has gone.
