Zuma opened on the third floor of The Cosmopolitan in January 2017, the Las Vegas location of the izakaya-inspired Japanese restaurant Chef Rainer Becker first opened in London in 2002. The 9,000-square-foot room was designed by Noriyoshi Muramatsu of Tokyo's Studio Glitt around natural materials: a stone feature wall, a backlit paper wall from Japan in the lounge, and robata and sushi counters made from tree trunks sourced from Thailand.
Dishes come from three kitchens, the main kitchen, the sushi counter and the robata grill, and arrive continuously for the table to share. Black cod marinated in saikyo miso and wrapped in hoba leaf is the signature, next to spicy beef tenderloin with sesame, red chili and sweet soy. From the cold side come yellowtail sashimi with green chili relish and sea bass sashimi with yuzu, truffle and salmon roe; from the robata, jumbo tiger prawn with yuzu pepper dressing and a rib eye with wafu sauce and garlic crisps. Omakase is offered at three levels for the whole table.
The bar has a martini bar set inside it, unique to Zuma Las Vegas, and pours cocktails like the Burning History: Suntory Toki with honey, ginger and yuzu under barrel stave smoke. Dinner starts at 5:30 p.m. Sunday through Thursday and at 5 p.m. on Fridays and Saturdays. Dress is upscale, and Marquee is in the same resort for later.
