The London-born izakaya from restaurateur Rainer Becker landed on the ground floor of the St. Regis in 2011 as the group's sixth outpost, and it has never loosened its grip on the city's see-and-be-seen crowd. This is contemporary Japanese built for sharing - a World's 50 Best Discovery name where the energy, not a tasting-menu hush, is the point.
The room is a masterclass in warm minimalism: hand-cut stone, dark timber, and three glowing open kitchens - a sushi counter, a robata grill, and the main line - all in view from the signature red-leather seats. Retractable glass folds back onto a lantern-lit garden terrace, while a wall of 400-plus wines and 50-odd sakes anchors the bar and lounge.
Food arrives in waves, not fixed courses. Open with the chu toro tartare with oscietra caviar or the sushi and sashimi platter, then let the robata do the heavy lifting: the 400g Australian black angus ribeye with black pepper and soy is the table's centerpiece. Finish with the special chocolate cake and vanilla ice cream.
