Las Vegas is now one of the best dining cities in America, and the hardest part is no longer finding a great meal, it is choosing. This is our ranked guide to the best restaurants in Las Vegas in 2026, the rooms we send our own guests to first, weighted toward the kitchen and the experience rather than the loudest name. This list is personal: it is built from the tables we actually book and eat, with a few go-to orders for each room so you know what to reach for. A couple of the biggest names in town are excellent but sit in the picks below rather than the ranked list, and a couple of quieter rooms outrank the famous ones on the plate. Last updated July 2026.

1. Carbone (Aria)
The most famous Italian-American room in America, and the hardest reservation in the city. Carbone is an event every night: tableside everything, and it earns the hype. Order the tableside Caesar, or the classic caprese when tomatoes are in season, then the meatball, the Dover sole with spicy angel hair, and a half order of the spicy rigatoni. See Carbone.
Best for: the marquee dinner, the table you book the trip around.
2. Bazaar Meat by Jose Andres (Sahara)
The most ambitious dining experience on the Strip. Jose Andres reinvents the steakhouse with live fire, a raw bar, and a sense of play you do not get at a white-tablecloth room. Any of the steaks are excellent, but the sleepers are the Philly cheesesteak bites, the cotton candy foie gras, and the beef tartare. See Bazaar Meat.
Best for: the adventurous group dinner, the full show.
3. Mother Wolf (Fontainebleau)
Evan Funke's Roman pasta temple, the LA hit that arrived at the Fontainebleau and immediately became the most serious pasta room in the city. Start with the dough and the warm burrata, work through the pizzas, and do not skip the pastas, which are the whole reason to be here. See Mother Wolf.

4. Mott 32 (The Venetian)
Top-tier Chinese in a stunning, design-forward room, and one of the best Chinese restaurants in the country. Open with the soup dumplings and the duck salad, then pre-order the Iberico pork and the Peking duck: both need to be ordered ahead to guarantee they are available at the table. See Mott 32.
Best for: the group dinner that wants something beyond the usual, and the Peking duck.
5. Mizumi (Wynn)
Wynn's refined Japanese room, with a waterfall-and-garden setting that is one of the prettiest dining rooms in the city. Go for the baked king crab hand roll, the bluefin chutoro (or the chutoro with truffle), the green chili yellowtail carpaccio, and the lobster tempura. See Mizumi.
Best for: a refined Japanese dinner with a view.
6. SW Steakhouse (Wynn)
Wynn's flagship steakhouse, and one of the most polished rooms on the Strip, lakeside facing the Lake of Dreams show. The short rib ravioli is a must (and very rich); the beef carpaccio and the chop salad are both excellent. Any steak is dealer's choice, but the lobster gnocchi and the short rib tater tots are meals of their own. See SW Steakhouse.

7. Gymkhana (Aria)
The Michelin-pedigree London import, and one of the most exciting arrivals in the city: modern Indian cooking with real fire and spice, in a clubby, atmospheric room. The chicken tikka, the lasooni wild tiger prawns, and the tandoori masala lamb chops are the standouts, with the chicken butter masala as the go-to. See Gymkhana.
Best for: the guest who wants the bold, the spiced, the different.
8. Zuma (The Cosmopolitan)
The Vegas home of the global izakaya, and one of the most consistent kitchens in town. Order the lobster tempura, the grilled Chilean sea bass, the pork belly with yuzu mustard, the seared tuna with chili daikon and ponzu, the 10 oz skirt steak, and, improbably, the baked potato with wasabi butter. Best for: the modern Japanese group dinner that pleases everyone.
9. COTE (Grand Canal Shoppes)
The Korean steakhouse, on the Strip: prime and wagyu cuts grilled at your table with a run of banchan. You cannot go wrong with the prix-fixe and the wagyu add-on, a full spread of beef cooked for you with every accompaniment; the Korean bacon and the kimchi-wagyu paella are the sleeper hits. Best for: the group that wants a steak dinner that is also an event, cooked at the table.
10. Carbone Riviera (Bellagio)
The Bellagio counterpart to the Aria flagship, from the same Major Food Group team, and one of the best fountain-facing tables in the city. Where Carbone at Aria is the classic Italian-American event, Carbone Riviera leans coastal and Riviera-Italian, the same polish and service in a room built around the Bellagio fountain view. The go-tos: the lightly grilled chutoro, the tableside Caesar, the spicy rigatoni vodka, the two-pound lobster fettuccine, and the Dover sole. See Carbone Riviera.

Honorable mentions
Toca Madera (Crystals) the high-energy modern Mexican room, more scene than the ten above but a genuinely fun, very good night out. Order the tuna tiradito, the A5 wagyu tacos, the wagyu burrito, and the street corn alongside the steaks.
Mastro's Ocean Club (Crystals) steak and seafood under the sculptural Treehouse. The seared big eye tuna, the maguro lime roll, the lobster bisque, the bone-in Kansas City strip, the lobster mac and cheese, and the creamed corn, then the butter cake with whipped cream on the side, one of the best desserts in Vegas.

For a premium room or any weekend or event-weekend prime-time table, plan on 3 to 6 weeks; most rooms are comfortable at 2 to 3 weeks, and weeknights are often available inside a week. A few of the top rooms run a fixed 30-day booking window, where the table opens exactly 30 days out and the best times go immediately, which is exactly where we help.
