Las Vegas New Year's Eve runs December 31, 2026. Not every room sells out, but a majority of the premium dining rooms, the premium nightclub booths, and the prix-fixe menus at the top restaurants get fully committed by the end of November. The peak hours compress into the 8 PM dinner seating and the 11 PM nightclub door. The central Strip closes to vehicle traffic, roughly from Tropicana north to the Wynn (not the entire boulevard), so dinner and club need to be coordinated with the walk in mind. We secure the right tables at Carbone, Mother Wolf, Toca Madera, and the Omnia, LIV, XS, and Hakkasan NYE booth tiers, the four-figure-minimum bookings that define the night.
By October 1, the most premium restaurants are effectively fully booked. By November 15, the nightclub inventory in town thins out, though there are still opportunities to lock in the venue and event you want.
Dining anchors for NYE
Carbone at Aria is the most-booked NYE dinner table on the Strip: the 8 PM seating that converts straight into the post-midnight club run, prix-fixe only. Mother Wolf at Fontainebleau runs the late-evening Italian premium dinner; its dining-room guests roll into casino-marketing parties, rooftop fireworks, or the premier nightclub event at LIV in the same building. Toca Madera at Crystals runs the modern Mexican format with late DJ programming that extends dinner into a midnight-on-site celebration.
Beauty and Essex at Cosmopolitan delivers the long-form group dinner for the party of six and up. Cosmopolitan diners pivot directly into Marquee Nightclub, or into a penthouse viewing party thrown by the property's casino-marketing team (if you play at the level that earns it, our sister site CasinoHostVegas walks through the Cosmopolitan host program). Papi Steak at Fontainebleau runs the see-and-be-seen steakhouse format for the NYE evening. Carbone Riviera at Bellagio is the Bellagio Carbone, fountain-side and central-Strip. Scarpetta at Cosmopolitan is Cosmopolitan's premium Italian option for the center-Strip portfolio.
Nightclub side: the 11 PM door
Omnia at Caesars is the highest-volume NYE nightclub on the Strip. The room is the main floor and balcony (the heart of Omnia) plus the rooftop terrace. The terrace does not face the Bellagio water show, but it has one of the best vantage points in the city for the midnight fireworks, so factor in that December weather makes it chilly. Booth tiers run four-figure minimums on the low end. LIV at Fontainebleau runs the premier NYE programming on the Strip's newest big-room property. XS at Encore anchors the Wynn-side celebration and is unveiling its new main room for NYE guests, worth knowing if you have not been in the seven weeks since it reopened.
Marquee Nightclub at Cosmopolitan does not get the Bellagio fountain view; it faces the south end of the Strip, but its elevation gives it a genuinely impressive line on the fireworks and the show. Hakkasan at MGM runs a multi-tier format: main room, mezzanine, and pavilion guests all get the headliner, while Ling Ling patrons get top-40 at a great value for a special-event night like NYE.

Transportation between hotels on New Year's is less than smooth, so thinking through the night's logistics, where you dine and where you are when the ball drops, matters as much as the food. By 1 AM some of the crowd fizzles, since it is a marathon of eating and drinking from the late afternoon through the fireworks, but the top rooms stay busy until 2:30 or 3 AM.

A few that work: SW then XS; Nobu then Omnia; the Hakkasan restaurant then the Hakkasan nightclub; or Don's Prime or Komodo then LIV. The top clubs (Omnia, LIV, XS, Hakkasan) traditionally sell around 80 percent of the room before December begins, so locking your ideal spot and event early is what keeps the evening smooth rather than left to chance.
