Zuma Cabo is the first Mexican room from Zuma, the contemporary Japanese restaurant that began in Knightsbridge, London, in 2002 and now cooks in Dubai, Hong Kong, Miami, New York and Las Vegas among other cities. It sits in Cabo del Sol on the Tourist Corridor, at Km 10.3 of the Carretera Transpeninsular, and opens on November 5, 2026.
Zuma describes the Cabo room as its signature cooking shaped by the spirit of Baja California, built from natural materials and warm interiors, and meant to move from an intimate dinner into a livelier evening.
The menu follows the Zuma format of sushi and sashimi, the robata grill and tempura, with an omakase served to the whole table. Two dishes are made only for Cabo: lobster shimofuri in a shiso chili dashi with crispy ginger, and crispy nori grouper with tomato jalapeño relish. The house signatures travel with it, among them black cod marinated in saikyo miso and wrapped in hoba leaf, spicy beef tenderloin with sesame and sweet soy, and a 40-ounce Australian wagyu tomahawk from the robata with wasabi and black truffle. At the bar, the Japanese paloma mixes tequila with yuzu, hibiscus and pink grapefruit.
Dinner is served nightly from 5 p.m., until 10 p.m. Sunday to Thursday and 10:30 p.m. on Fridays and Saturdays. A separate event space hosts weddings and private celebrations for up to 200 seated or 400 standing guests.
