Nobu Malibu sits on the Pacific Coast Highway, looking out over Surfrider Beach and the Malibu Pier. An open-air layout with floor-to-ceiling windows and an expansive patio pulls the ocean into the room, and in the evening the lighting drops low and the sound of the waves takes over.
The dining room opens at noon every day, so lunch with the water in full daylight is as much of the draw as dinner at sunset. It closes at 10pm Sunday through Thursday and 11pm on Friday and Saturday. The sushi bar and the bar lounge take walk-ins onto an in-house waitlist, though reservations are strongly recommended.
The kitchen works from Chef Nobu Matsuhisa's mix of Japanese and South American flavors: black cod with miso, yellowtail jalapeno, rock shrimp tempura and a full nigiri and sashimi list, alongside California-inspired and seasonal dishes. The Nobu Signature Menu and the Omakase hand the ordering to the kitchen, and Japanese A5 wagyu from Kyushu comes in styles from tataki to hot stone. At the bar, the Malibu Breeze pairs blood orange vodka with elderflower, yuzu soda and kumquat.
For a private dinner, the partially covered Private Fireplace Patio is the most requested space in the house, and the Private Dining Room faces the Pacific through floor-to-ceiling windows. Nobu Ryokan Malibu, the 16-room inn on Carbon Beach, is moments away. Reservations open one month ahead, to the calendar date.
